Dried beans are a natural food and should be cleaned like any other vegetable. Sort out any unwanted material and rinse well. Cooking Instructions: To Prepare: [1lb. Dry lentils (2 cups) = 5-6 cups cooked lentils] sort and rinse lentils. In saucepan, combine lentils with water and salt (for 1lb. Dry lentils, use 6 cups water and 3 tsp. Salt) and bring to boil. Reduce heat and simmer, covered, about 20-30 minutes until lentils are tender (overcooking may cause lentils to split). Drain immediately. To serve: add cooked lentils to soups, salads and rice. For areas with hard water, which may lengthen cooking time, add 1/8 tsp of baking soda per pound of beans or use bottled water.
