Sesame-Crusted Seared Tuna Steak with Fresh Chili-Ginger Ponzu & Jasmine Rice
1 ½" thick Tuna Steaks
Black and White Sesame Seeds
Sliced Chili Peppers
Fresh Minced Garlic
Buy thick steaks – 1 ½" thick is perfect to allow time to sear the outside and keep the center rare.
Season the steaks with coarse salt and black pepper and then press into a mixture of white and black sesame seeds to fully crust each side. Place a sauté pan over medium-high heat with enough oil to coat the bottom and heat until the oil just begins to smoke, then sear the tuna for 2-3 minutes per side, until the sesame seeds are golden. Serve or slice immediately to limit carryover cooking.
Stir thinly sliced chili peppers, minced fresh ginger, lime juice & cilantro into your favorite ponzu to make a light sauce. Serve with jasmine rice.
